  • 2½ to 3 pounds broccoli (2 bunches)

  • 1 tablespoon extra virgin olive oil

  • 2 cups chopped onion

  • 2 tablespoons mellow or sweet white miso

    I never knew that about pureeing and glycemic index…oh my! Here I thought I was doing my self a favor using potato to thicken instead of flour! I do often steam separately for vegetable soups so there is some color in there…especially important when I make a great mushroom veg soup which turns blech pink… not pretty but so good!     I do hope this soup works for you. One suggestion: because broccoli does contain significant fiber, you might want to make it as my husband prefers and puree all of it. That will make it easier to digest.

    I made this soup this afternoon, and omitted the mild miso, since I did not want to go back out into the rain. I did have on hand a good home made chicken stock, and I pureed the soup and was delighted to see that the silken tofu works very well to produce a “cream” soup.(not a fan of tofu either). Bland but attractive soup. Added a dollop of grated Parm cheese to first little bowl and it was delicious. Tried grated ginger on the second bowl, also delicious. Next toasted almond slivers-also good.
    So thanks for bringing tofu back!

    Glad to be of service!! BTW, the soup would definitely suffer from the absence of miso which provides much-needed depth, as I mention in the Strategy Session above. So, I’m not surprised it was “bland” without it. Even with the miso, it needs something , whether it’s my tarragon, Georgie’s saffron, or your Parmesan cheese. You can only get so far with broccoli alone :) .
